Coconut Curry Corn Salad
Servings: 6-8

Raw Food Recipe - Coconut Curry Corn Salad“We devised this one as a modification of a few other favorite versions.  This one is almost universally appealing!”

Salad Dressing:

  ¼ Cup
¼ Cup
½ Cup
1½ Tbsp
1½ Tsp
2 Tbsp
2 Tbsp

Pine nuts
Lemon juice
Thai coconut water or milk
Curry powder
Himalayan or sea salt
Extra virgin olive oil
Blue agave nectar

Salad Ingredients :

  4 Ears
1 Cup
½ Bunch
½ Bunch

Sweet corn
Celery, chopped
Scallions, chopped
Cilantro, no stems, finely chopped

In a blender combine all dressing ingredients and blend until very smooth.  Combine with all other salad ingredients and mix well.
